Microwave Oatmeal Cake

Busy morning? Need something new for breakfast? Craving something sweet and warm? Don’t feel like waiting for the oven to preheat? This oatmeal cake is here for you! It’s so versatile because you can change up the flavor by adding different mix ins, extracts, or cocoa powder. This is a recipe that my kids are always happy to eat in the morning, and we have leftover for the next 1-2 days. Eat it for breakfast or eat it for a snack!

What you’ll need

Microwave Oatmeal Cake with chocolate chips
  • Banana: The riper the better (sweeter)
  • Egg (use a flax egg if you want this recipe to be egg free
  • Vanilla extract (feel free to experiment with the flavor and substitute different extracts)
  • QUICK oats
  • Milk (or milk substitute)
  • Baking powder
  • Ground cinnamon
  • Honey, or your preferred sweetener (omit for babies aged 6 months-12 months)
  • Nut butter or Sunbutter
  • Your favorite mix ins

This is important!

When I first posted this recipe on Instagram, I got quite a few messages saying that this recipe didn’t work. What was the problem each time?

Not using the right kind of oats.

For this recipe, you need to use microwave, or quick oats. The canister will actually say “microwave oats,” “quick oats,” or “1-minute oats.”

This does NOT mean flavored oatmeal packets. You’re going to want the plain unflavored oats that come in either a bag or a tall canister (usually).

The Dish Matters

Larger dish = shorter cook time

Start with 7 minutes and add a few more minutes if the center isn’t cooked.

Whip up this quick and easy microwave oatmeal cake on your busiest mornings. Its healthy, nutritious, and you can change it up with different mix ins. Perfect for babies 6 months + but great for the whole family!

Ingredients
  

  • 1 mashed banana
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup quick oats
  • 1 cup milk
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 2 tbsp honey sugar, or preferred sweetener (omit for children aged 6-12 months)
  • 2-3 tbsp nut butter optional
  • Mix-ins: chocolate chips blueberries, raisins, etc.

Instructions
 

  • In a medium-sized microwave-safe dish (such as a casserole dish or Pyrex), combine all ingredients.
  • Mix well to ensure all ingredients are fully incorporated.
  • Microwave on high for 7-9 minutes, or until the cake is set and cooked through.
  • Allow to cool slightly before serving.

Notes

  • The size of your dish will effect your cook time. If your casserole dish is bigger, your cook time will be shorter. If it is smaller, you cake will take longer to set.
  • You cannot substitute the oats for any other type of oats.
  • To make this egg free, replace egg with a flax egg.
  • A dairy free milk substitute will yield the same results.
