Microwave Oatmeal Cake

Whip up this quick and easy microwave oatmeal cake on your busiest mornings. Its healthy, nutritious, and you can change it up with different mix ins. Perfect for babies 6 months + but great for the whole family!

- 1 mashed banana
- 1 egg
- 1 tsp vanilla extract
- 1 cup quick oats
- 1 cup milk
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 2 tbsp honey sugar, or preferred sweetener (omit for children aged 6-12 months)
- 2-3 tbsp nut butter optional
- Mix-ins: chocolate chips blueberries, raisins, etc.
In a medium-sized microwave-safe dish (such as a casserole dish or Pyrex), combine all ingredients.
Mix well to ensure all ingredients are fully incorporated.
Microwave on high for 7-9 minutes, or until the cake is set and cooked through.
Allow to cool slightly before serving.
- The size of your dish will effect your cook time. If your casserole dish is bigger, your cook time will be shorter. If it is smaller, you cake will take longer to set.
- You cannot substitute the oats for any other type of oats.
- To make this egg free, replace egg with a flax egg.
- A dairy free milk substitute will yield the same results.
