Blueberry Baked Oatmeal: A Healthy, Easy to Prep, Breakfast
I always find it interesting how certain scents bring back intense memories. For me, usually pleasant memories. Anytime I’m in a cafeteria style lunch line that serves both sandwiches and ice cream, I’m brought back to lunch at my favorite childhood family vacation – a Wisconsin northwoods cabin and lake resort (charmingly old and quaint).
Recently, I could smell neighbors having a bon fire as I walked to get something out of my car on a hot evening. Those smells combined (the inside of a car plus the fire) brought me right back to our camping trips, where we’d get our s’more ingredients from bins packed in the trunk of the car.
Another scent memory that will stick with me forever is waking up to the smell of breakfast in the morning. Sometimes it was sweet (like muffins or waffles), and sometimes it was savory (like bacon, eggs, or my childhood favorite – canned corned beef hash). But, either way, it was always a great way to get out of bed in the morning.
So this is a type of memory that I often try to recreate for my own kids. But, in true Happy Hungry Littles fashion, with a healthier twist. Can we have delicious scents that waft up the stairs, filling the kids’ bedrooms in the morning, while cooking with healthy ingredients? We absolutely can.
A Simple Recipe for Busy Mornings
This type of recipe is one where it looks and tastes like it took ages to make, but it’s actually very simple. I tried to remove complex ingredients or steps and truly keep this recipe as easy as possible. This is your new go-to recipe, one where you’ll easily memorize the steps and ingredients, and it will be a breakfast staple in your home. A new scent and flavor memory for your kids to look back on and smile.
What You’ll need
For this recipe, you’ll need the following ingredients
- 1 cup of rolled or old fashioned oats
- 1 cup of milk or milk alternative
- 1 egg
- 1 ripe banana
- one spoonful of peanut butter or other nut butter
- Cinnamon
- Blueberries
The Final Product
I love how this baked oatmeal turns out because it doesn’t have the mushy sticky texture that
most oatmeal has. It’s more like an extra extra soft breakfast bar, or a breakfast “cake.” You can scoop it out and eat it with a spoon, but without the mess that oatmeal creates for the littlest eaters! For our kiddos 12m+, feel free to drizzle some honey over the top for some extra sweetness – if you’d like.

Blueberry Baked Oatmeal
Ingredients
- 1 cup oats rolled or old fashioned
- 1 cup milk or milk alternative
- 2 tbsp peanut butter
- 1/2 tsp cinnamon
- 1 mashed banana very ripe
- 1 cup blueberries fresh or frozen
Instructions
- Preheat oven to 350 F (175 C).
- In a pie dish or medium sized casserole dish, mash one ripe banana with a fork.
- Add the rest of the ingredients to the dish and mix well.
- Place the dish uncovered in the oven for 25-30 minutes.
- Allow baked oatmeal to cook slightly, serve, and enjoy!
Notes
- Feel free to use more or less blueberries, depending on how many you like in your baked oatmeal
- For anyone over 12 months of age, feel free to add a honey drizzle over the finished plated baked oatmeal. It is a delicious combination and adds a touch of sweetness!
- You can use a flax egg to replace the egg if necessary.
- Any dairy free milk will work.
