Blueberry Baked Oatmeal

A quick and simple breakfast recipe for busy weekdays or weekends. All healthy ingredients, no added sugar, and minimal prep work. This is your new go-to breakfast!

Ingredients
  

  • 1 cup oats rolled or old fashioned
  • 1 cup milk or milk alternative
  • 2 tbsp peanut butter
  • 1/2 tsp cinnamon
  • 1 mashed banana very ripe
  • 1 cup blueberries fresh or frozen

Method
 

  1. Preheat oven to 350 F (175 C).
  2. In a pie dish or medium sized casserole dish, mash one ripe banana with a fork.
  3. Add the rest of the ingredients to the dish and mix well.
  4. Place the dish uncovered in the oven for 25-30 minutes.
  5. Allow baked oatmeal to cook slightly, serve, and enjoy!

Notes

  • Feel free to use more or less blueberries, depending on how many you like in your baked oatmeal
  • For anyone over 12 months of age, feel free to add a honey drizzle over the finished plated baked oatmeal. It is a delicious combination and adds a touch of sweetness!
  • You can use a flax egg to replace the egg if necessary.
  • Any dairy free milk will work.
