Banana Mug Cake

This banana mug cake can be prepped in 7 minutes and cooks in the microwave in 5 minutes! You'll have a homemade healthy breakfast or snack, but without all the effort. Use almond flour for higher protein and fiber. BLW, toddler, family.

Ingredients
  

  • 1 small/medium ripe banana mashed
  • 1 egg
  • 1 tablespoon melted butter
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 1/3 cup almond flour
  • 1/2 teaspoon baking powder
  • A few shakes of ground cinnamon

Method
 

  1. In a large mug, mix together mashed banana, egg, melted butter, milk, and vanilla extract.
  2. Add almond flour, baking powder, and cinnamon to the mug, and mix until well combined.
  3. Microwave on high for 5 minutes.
  4. Allow to cool slightly and enjoy!

Notes

  • Experiment with mix ins like chocolate chips, blueberries, diced strawberries, or raisins (depending on baby's or toddler's age)
  • Making this in the oven? Use an oven safe dish and preheat oven to 350 F or 175 C. Bake for 25-30 minutes.
  • Flour substitution: Use all-purpose flour but decrease the amount to 1/4 cup. INCREASE baking powder to 1 teaspoon.
